The National Mango Board (which sounds like a way more fun board than the National Board of Paper Weights) recently sent me a case of mangos and a recipe book with all kinds of cool recipes like Coconut Shrimp with Ginger Mango Sauce and Mango and Bacon Barbecue Pizza.
I ultimately decided to make Tropical S’mores because it seemed like something they’d offer on a festive Caribbean cruise and because it sounded way easy.
Now this recipe called for marshmallows, mangos, caramel and soft molasses cookies which I could not find anywhere. So I used graham crackers instead of the cookies. Which is totally different.

My 8-year-old daughter Dylan really liked it.
My 5-year-old daughter Summer really didn’t like it. But in all fairness, there are also 548 other foods she doesn’t like. So unless that mango suddenly turned into a bagel with butter, there was little hope she was going to dig it.
I thought it was quite yummy but actually prefer my mangos pure and simple. Just cut up on a plate. As for Rick, well, he likes his in the air, accompanied by some music.
