building on the pizza idea, my kids love mini pizzas made with the little cans of biscuits you bake in the oven and topped with turkey pepperoni and veggies.

homeade chicken nuggets, just cut chicken breasts into chunks and use shake and bake to coat them.

grilled cheese cut into strips

homeade granola topped over baked apples and topped with yogurt

hummus and pita wedges

cheese and turkey cut little and served with crackers...

just some simple ideas my kids like.

You could try risotto cakes or polenta, or making pancakes with chopped up veggies in them. The Petit Appetit cookbook has a good recipe for those, and I've also found yummy recipes on weelicious.com.

My kids always loved homemade pizza. You can get fancy and make your own crust or just use whole wheat pita or flat bread straight out of the package. Put whatever she likes on top or sneak in some pureed veggies in the sauce. Slice it in strips to make it easy for little hands.

When my daughter was that age, she loved meatballs. I would usually make up a batch of meatballs (made them small enough for her to pick up with her fingers) and after cooking them, I froze them in a ziplock bag. For her lunch, I would take a couple of meatballs out of the ziplock and toss them in the microwave for a minute. You can serve them plain (which my daughter loved) or toss them with noodles and a little marinara, or even with rice and veggies. What I loved the best was that I really only had to cook them once and had days and days worth of meals in my freezer.

My son LOVES pastina (star-shaped mini pasta). I make it with chicken broth (for protein) and add parm cheese, butter and frozen mixed veggies. He can't get enough and I feel like it's healthier than straight-up noodles.
